If I was looking to start a consecutive days running streak, what would the minimum amount of miles be I would need to run each day for that day to count towards the streak?
Depends on who's checking up on you/who you're reporting to, I guess! And, I suppose, on what your motivation/reason for doing it is. If it's just to motivate you to get out there, then I would say any mileage counts, even less than a mile. Lacing up the shoes and running at all. If something else is motivating you, then maybe there are minimum requirements imposed by some running-police-types? So then maybe a mile.
Personally, I don't get it (The running every day for a gazillion days thing). Based on what I read (I did blog entry on it once), rest days are needed for a variety of reasons. Running streaks seem like they are inviting injury and/or burn out.
I agree with RFTL in that rest days are important, but how much does a 1 mile, sleasy run tax you? I'd say anything over a mile counts as running for the day, but if you weren't trying to streak, what would a 1 mile run do for you? You wouldn't go out and run one mile and count that as a workout, normally, right?

Just my two cents. Feel free to disregard!
The streaks on http://runeveryday.com/ count 1 mile/day as contributing to a streak
Yes, that's what I've heard and read also. 1 mile minimum a day counts towards a running streak.

Just thinking out loud here...
There's a guy where I'm from who has a pretty long streak, I believe it's 18 years.
Basically he started running when he was in his early 30's and hasn't stopped.
His definition is 1 mile. However most of his runs are probably more than that.
I think it's personal though, no right or wrong answer. 1 mile seems like a good minimum, or if you're going by time, then 10 minutes.
